I haven't read anything about balanced memory on this new model. It seems you can install in any combo you want. Due to the price difference, I am going 4x2. If thats not enuff, hopefully price will come down if I want to replace any or all of these with 4GB strips. OWC memory is $100 for 2x2 and $500 for 2x4. I am betting that 2x4 will come down by more than $100 over time to make it easy to justify moving from 8 to 12GB should I want to.

Most if not all recent Intel processors profit from having memory installed in pairs, and some also from having it in sets of four. Not sure whether that last bit applies to the current iMac. If yes, 4x2GB would be slightly faster.

The choice is only a concern if you are eventually planning to go to 12 or 16GB. If you will be sticking to 8GB, then 4x2 is the obvious choice from Apple, or better yet 2x2 and 2x2 from a third party like Crucial or OWC. 16 GB starting with 4x2: Total cost is 200 + 4N where N is cost of 4GB stick. 16GB starting with 2x4: Total cost is 600 + 2N Break even point is $200 per stick.
If it is lower at time of purchase then 4x2 was correct decision. Otherwise 2x4 is correct decision. Current cost is $299 from Crucial. 12GB starting with 4x2: Total cost is 200 + 2N 12GB starting with 2x4: Total cost is 600 + 2M where M is cost of a 2GB stick. If you are only going to 12 GB, the break even point is N-M = 200, so if a 4GB stick is more than $200 more expensive than a 2GB stick then 4x2 is the right choice, otherwise 2x4 is the right choice. Current cost of a 2GB stick is $48 from crucial. So the bottom line is 2x4 is the best choice if you would upgrade sooner rather than later when prices of memory drop.

I don't know about speed, but if you plan on eventually installing the maximum amount of RAM (16GB = 4x4GB), then this choice is a matter of 1. 'pay me now' (buy 2 expensive 4GB modules now, so you'll only need to buy two more 4GB modules to put in the 2 free slots later), or 2.
'pay me later' (get cheap memory now, but then buy 4x4GB and toss 4x2GB later). At least you have a choice. The previous generation of iMacs had only two RAM slots, so people wanting 8GB had to do things the 'pay me now' (2x4GB) way.

It seems like the optimal strategy here is your initial suggestion, to NOT buy the 8GB configuration from Apple at all.
Instead, buy only the base 2x2G RAM. What you do next is determined by what you find out you actually need.
You can wait and see on any upgrades beyond 8GB, and just spend $100 on 2x2G sticks from Crucial. Near-term savings: $100.

Or, spend the $600 you would have paid Apple for the 2x4G=8GB on 2 4G sticks from Crucial, yielding a 12GB machine for the same price as an 8GB Apple machine. That's probably more than enough. If it really starts cramping your throughput, replace the 2x2G sticks with cheaper 2x4G sticks in 9-12 months.
Right now, getting a 16GB machine will cost $1200 over base configuration; a 12GB, $600; an 8GB, $100. In 9-12 months, that 16GB will be down to about $800, and 12GB down to $400. Now the next question is.if you don't need balanced memory, why isn't Apple offering a 12GB option? If it turns out that you can't mix and match, then the base config + 2x4G sticks from crucial option costs as much as the factory 2x4G option. If it turns out that you can, you're 4G ahead.
